What to do with rotting bananas: sugar-free banana bread

If you’ve got some rotting bananas lying around, before you trash them, consider how sweet they are. They make a nice substitute for processed sugar.

While fruit sugar (fructose) on its own isn’t necessarily a better alternative to cane sugar (note the battle over high fructose corn syrup (HFCS)), it’s a great alternative if it comes packed in whole fruit. After all, fruits like bananas are high in fiber (bananas have about 3 grams per fruit) and packed with vitamins and minerals.

In this video, I and my daughter Inés use some old bananas, a bit of wheat flour, a couple eggs, a bit of butter and some raisons and cinnamon to make a sugar-free banana bread (cake?) for her 2nd birthday.
